We tried these yummy, spicy pink oyster mushroom tacos, and we’ve got to admit, we are hooked. It’s the perfect amount of spice with a garlic-y flare, a citrusy twist, and meaty mushroom goodness. The best part? It is super simple to make and it’s a great option for our vegetarian friends out there. Pair it with cilantro rice and you’ve got a whole meal!
Here’s what you’ll need:
2 packs of pink oyster mushrooms
1 tablespoon of Sriracha
1 teaspoon of minced garlic
½ teaspoon of salt
Salsa of your choice
Here’s how to make it:
Cut or tear your pink oyster mushrooms into similarly sized strips.
Squeeze half of the lime into a bowl and mix the juice with Sriracha, garlic, and salt.
Toss mushrooms in the marinade. Then let them sit for 20 minutes, so they have time to really absorb all of that flavor.
Pan fry until golden brown and then spoon into your taco shell
